Benefits of Carrots – Carrot History.

The carrot from the Latin word carota, is a root vegetable, that is normally orange in color, and also yellow, purple, red and white, varieties exist. Iran and Afghanistan are the suggested origin of wild carrots. Over the centuries Selective breeding of subspecies of the wild carrot occurred to reduce bitterness, increase sweetness and limit the rough core, and has produced the carrots you see today. The domestic carrot, the orange color, has been selectively bred for its greatly enlarged and more palatable use.

Consuming Carrots.

There are a variety of ways to eat carrots. Carrots can be consumed raw or juiced for high nutrition. Carrot juice is often marketed as a health drink and is usually blended with fruits and vegetables. They can be chopped up and fried, baked, steamed, boiled, used for soup, stews, salads etc. carrots are often used for desserts, such as carrot cake, carrot bread, pudding, or pie.

Benefits of Juicing Carrots.

Juicing vegetables and fruits help your body absorb nutrients into your body’s cells more rapidly.  Carrot juice has many healthy benefits.  Many people call it the “Miracle juice” because of its wonderful healing properties.  It is regarded as a herbal healer.  Its main nutrients are vitamin A and Beta-Carotene.  They are anti-oxidant, anti-cancerous,Rich in minerals, B-vitamins flavonoids, Lutein, and much more to that list.  When juicing carrots it is used frequently as a base in juicing recipes.  You can add apples, spinach, broccoli, beets, Kale, Celery,Ginger Root, just to name a few.  My favorite Carrot Juice basically consist of  mostly carrot juice, add about 2 green or red apples for sweetness, kale,  and broccoli, and not only do you get all its health benefits but it gives you that “Energy Surge” you need to get through your day!!

Deliciously Moist Carrot Cake.


This recipe is Paula Deens favorite carrot cake recipe created by her Grandmother.  Carrot cakes are a big hit for the Holidays.  I love to see the excitement in my familys face when placing carrot cakes, pumpkin pies, and other goodies on the table for the Holidays.  Here’s one recipe  family and friends will devour in no time!!

Things you’ll need:

  • Butter to grease pans

  • two cups of all purpose flour

  • two cups of sugar

  • two teaspoons of baking soda

  • two teaspoons of ground cinnamon

  • one teaspoon of salt

  • 4 whole eggs

  • one and a half cups of vegetable oil

  • 3 cups of  finely grated carrots

  • one and a half cups of chopped pecans

* You can also add other ingredients like crushed pineapple bits, golden raisins, orange juice , nutmeg, grated lemon zest, orange marmalade….  to make it your own!

Frosting-   

  • Two (8oz) packages of cream cheese (at room temperature)

  • One stick of salted butter  (room temperature)

  • One (16 oz) box of powdered sugar

  • One teaspoon of vanilla extract

  • and half a cup of chopped pecans

*  Whisk  frosting ingredients in a bowl till it gets fluffy and then add chopped nuts.

* Option– You can either make your own frosting or buy a store bought cream cheese frosting and add chopped pecans.

 Deliciously Moist Carrot Cake

Directions:

  • Preheat oven 350 degrees

  • Grease and flour 3 round cake pans (9 inch pans)

  • add parchment paper to pans

  • Finely grate about a pound of carrots by hand or food processor (which will yield 3 cups)

  • Mix wet and dry ingredients in seperate bowls

  • When finish mixing both,   add dry ingredients into wet ingredients and start to add carrots, nuts,  spices, or other favorite ingredient you would like to add. (you can mix by hand or use electric mixer)

  • Start to pour batter in pans till almost halfway the depth of the pan.

  • After 30 minutes check to see if its done, if not add an additional 5-1o minutes

  • When ready remove from oven and let cool for about 5 minutes

  • Then remove cake from pans and allow them too cool completely before adding the frosting

  • Now you’re ready to stack the cakes — spread frosting on each layer and stack the 3 layers and you’re job is done!

  • Serve and Enjoy!! 😀
