Well, Halloween is around the corner and as I drove around the neighborhood saw a couple of Pumpkin Patches..I remember how my kids loved going to these Pumpkin Patches and picking out a Halloween Pumpkin.

Pumpkins are one of  the most popular foods for Halloween and Thanksgiving.  Not only can you make great Pumpkin recipes but you can have your kids decorate them for inside or outside of your home.

Nutritional Facts.

Pumpkins are a actually a fruit and not a vegetable like so many think. It is a squash-like fruit whose size can range from less than one pound to over 1,000 pounds!  They come from The Cucurbitacea family which also include gourds, melons, squash, cucumbers, and watermelon.

Pumpkins are low in saturated fats, cholesterol, and sodium. Their main nutrients are Lutein, Alpha and Beta Carotene. Pumpkins are a good source of Vitamin A,B,C,E,B6, iron, magnesium, potasium,  and Pantothenic acid. It has numerous health benefits and an excellent source of Omega 3 and 6 fatty acids.

There are so many delicious recipes you can make from fresh or canned pumpkin. You can make fabulous recipes with the pulp and roast the seeds as a snack or on salads.  Fresh Pumpkins are usually in season during fall and early winter. You can make all sorts of recipes for soups, pies, breads, muffins, pancakes, pudding, smoothies -The list is endless! My absolute favorite is the Pumpkin Pie, My family can’t have enough of those during the holidays including Christmas! Just look at that picture, Yummy!!!

 Pumpkin Pie Recipe With Fresh Pumpkin.

*Note*-  When using fresh pumpkin, the best way to cook it is to bake it. You cut the Pumpkin into halves or quarters depending on the size and scoop out the seeds.  Put the pumpkin pieces in a roasting pan with half a cup of water. Roast or bake at 400 degrees for 30 minutes.(for medium size pumpkin) Make sure its really tender. Once it’s cool enough to handle, scoop the pulp with a spoon and put it in a blender or food processor to make sure all the stringy bits are gone.  This will give you 2 cups of puree,  season,  and use it to make your favorite dishes.

The Dough:

  • 1  1/4 cups all-purpose flour, plus more for dusting

  • 2 tablespoons granulated sugar

  • 1/2 teaspoon salt

  • 2 tablespoons vegetable shortening

  • 4 tablespoons cold unsalted butter, cut into 1/2-inch pieces

  • 2 tablespoons beaten egg (about 1/2 large egg)

*note- if you don’t want to make dough from scratch  you can buy a pillsbury pie crust instead to make it easier on you.

The Filling:

  • 2 cups of fresh puree or/ one- 15-ounce can pure pumpkin

  • 3/4 cup packed dark brown sugar

  • 3 large eggs

  • 1 cup half-and-half

  • 1 teaspoon ground ginger

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground allspice

  • 1/8 teaspoon ground cloves

  • Whipped cream, for serving or your favorite vanilla ice cream.

 Pumpkin Bread Recipe – Holiday Pumpkin Bread – (video below)

  • 2 cups flour

  • 1 1/2 cups whole wheat flour

  • 2 cups soft brown sugar

  • 2 teaspoons baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 1 1/2 teaspoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • 1 teaspoon ground allspice

  • 1/2 teaspoon ground cloves

  • 15 oz fresh or canned pumpkin puree

  • 1 cup skim milk

  • 3/4 cup non fat egg product

  • 1/2 cup canola oil

  1. Preheat oven to 350°F. Butter the bottom of the baking pan. Mix flours, soft brown sugar, baking soda, cinnamon, nutmeg, baking powder, salt, allspice and cloves in a large bowl until smooth.

  2. Mix your fresh pumpkin puree, milk, egg product and oil in a large bowl until blended smooth. Stir into flour mixture until well blended. Spread batter evenly in the pan or pans depending on how many you are making.

  3. Bake for about an hour to an hour and ten minutes. Check to make sure its cooked all the way through. Let sit until room temperature.
